PROBLEM TO BE SOLVED: To provide a highly active α-L-arabinofuranosidase capable of specifically splitting the L-arabinose side chain of arabinoglucuronoxylan, and to provide a method for producing L-arabinose and xylitol using the above enzyme.;SOLUTION: This new α-L-arabinofuranosidase has the physicochemical properties described below: (1) action and substrate specificity: acting on arabinoglucuronoxylan to specifically split the L-arabinose side chain thereof; (2) optimum pH and stable pH: the optimum pH is about 4.0 in a citrate buffer solution, and stable at about pH 7-10 under the treatment condition at 50°C for 3 h; (3) optimum temperature and temperature stability: the optimum temperature is about 65°C, substantially undergoing no deactivation at ≤50°C; (4) effect of metal ions: undergoing inhibition by Hg2+; (5) molecular weight: about 88,000 determined by gel filtration chromatography; and (6) isoelectric point pI: about 4.2.;COPYRIGHT: (C)2002,JPO
