MONASCUS COLORING MATERIAL WITH HIGH LIGHT STABILITY

PROBLEM TO BE SOLVED: To provide a method for suppressing the color fading of a processed food colored with a monascus coloring material due to being irradiated with light and thus stabilizing the food when it is preserved under irradiation with sunlight or the rays emanated from fluorescent lamps in a refrigerating show case or the like, and to obtain the monascus coloring material improved in the stability to light irradiation. SOLUTION: This new monascus coloring material is obtained by formulating a monascus coloring material with a phytopolyphenol such as tannic acid or catechin or a its combination with a polyhydric alcohol, and optionally, tocopherol.
