PROBLEM TO BE SOLVED: To provide an agent for suppressing production of odor component due to deterioration of milk or milk products, capable of effectively suppressing production of odor component due to deterioration of milk or milk products by light and stably keeping quality of these products for a long period.;SOLUTION: Production of an odor component due to deterioration can effectively be suppressed by adding 1-500 ppm agent for suppressing production of the odor component, containing at least one kind of compound selected from a group consisting of epicatechin, epigallocatechin, epigallocatechin gallate, chlorogenic acid, caffeic acid, ferulic acid, sinapic acid, rosemarinic acid and gallic acid to milk or milk products.;COPYRIGHT: (C)2002,JPO
