PROBLEM TO BE SOLVED: To provide a cereal processed food improved in disaggregation without spoiling its appearance, taste and palate feeling.;SOLUTION: This cereal processed food improved in disaggregation is obtained by adding 0.05-1 unit of a naturally derived lipase based on 1 g of raw material flour, and then adding at least one kind selected from thickening polysaccharides, dietary fibers and calcium to the resultant.
