We describe Three Monoclonal Antibodies (MoAbs 3bh1 1c4d9 designated, and 2alc4) that are specific to prolamins of Wheat, Barley, Rye and Oats.The detection of small quantities of toxic prolamins in Foods is of fundamental importance for Coeliacs because strict Diet free of Harmful Proteins is their only form of tTreatment.The enzimoinmunoensayos (ELISA) have been shown to be mayoraplicabilidad Techniques for its high specificity for Detectability and Certification of products for Coeliacs.In this work is the Optimization of three enzimoinmunoensayos used monocolonales Antibodies (MOAB) and biotinaestreptavidina Amplification System.Two of them used biotinylated MAB and the Third uses Biotinylated Antigen. Trials using biotinylated MAB is one in a elisacompetitivo and the second in a Capture Elisa.In competitive Elisa, The MAB 3b4hl allows the testing of Higher Detectability (forquick limit: 20 ng / ml, 1 mg / 100 g).In contrast, The MAB Capture ELISA 2alc4 produced the best results (Detection limit of 1 ng / ml, 0.1 mg / 100 g).In the Third essay, using Commercial biotinylated gliadin was obtained a Detection limit of 5 ng / ml, 0.5 mg / 100 g.The MAB obtained permitierondesarrollar Three quantitative tests that Exhibit High Detectability for the determination of prolamins in food.We have used the Biotin Streptavidin System Amplification System, which until now had not been used in tests to quantify gliadins.The ensayosdesarrollados comply with what is established by the World Health Organization for the analysis of Foods for Coeliacs.
