Product structuring composition which will form a double layer lamellar gel network in an oil-in-water system, comprising (a) a cationic volume-gaining agent which is an amidopropyl dimethyl-2-hydroxyethyl halide fatty acid adductor ammonium, and (b) a low HLB emulsifier gel-forming mixture having a resulting HLD of about 1.5 to 4.5.
