PURPOSE: A process of the titled jam composition by concentration of fruits of Eriobotrya japonica in a vacuum concentrator is provided, which has an effect on producing the jam composition excellent in palatability and functionality without detriment to its flavor and color. CONSTITUTION: The pericarp and seeds of the fruit of Eriobotrya japonica are removed and then concentrated in a vacuum concentrator. The concentrate is then added with 80 to 90% by weight of sugar based on the concentrate and heated. The final product has a sugar content of 65% or more.
