Meat product made by mixing pieces of meat with binder of blood plasma and additional fibrogen, pressing mixture into tube, etc and keeping just below freezing for one or two days
A block of meat made into a chosen shape includes pieces of meat held together by a binder. An Independent claim is included for the following: (a) Making a block of meat as above includes mixing the pieces of meat together with a binder and pressing the mixture into a tube or a form. The binder includes blood plasma with additional fibrogen. The tube or form is stored for 24- 48 hours at -3 to 0 deg C. Preferred Features: The mixture is made up at ambient temperature and includes salt. The pieces of meat can be of one or more types, e.g. pork, veal, poultry. The binder forms about 2 wt% of the product. The product can be sliced or frozen to -40 deg C.
