In a process to treat slaughterhouse effluent water by the removal of blood, oil, emulsified oil and fat, a dosed quantity of a reactant is introduced. The agents react with the impurities converting them to separable consistency. The agents are introduced especially in proportion to the quantity required. The quantity of agent is determined by measuring acid capacity of the water. This is determined indirectly from the difference between the continually measured actual pH value and a target pH value.
