A red wine fermentation vat holds a charge of crushed grapes and has a juice flooding system with circulation pump (11). The flooding system (12) has a movable arm (14) with one or more jets (15) discharging a large volume of juice (17) within a limited surface area of the grape cake (7) at any one time. Repeated arm movements cover the entire surface (7) area. The jet is a slit jet (15) extending the entire length of the arm (14) and discharging through an angle of 90. The arm rotates about an upright axis (13) that is at the center of the vat. The vat may be of circular or rectangular cross section.
