Breaking the cap of a marc (1) formed by floating fruit residue in a vat (2) includes using partly immersed pump(s) (3) to deliver liquid onto the cap. Each pump has rotating ducts delivering liquid into the marc. Independent claims are also included for the following: (A) Apparatus for performing the above where each pump has a hollow cylindrical body containing a helix at its immersed lower end and connected by a shaft to a motor at its upper end, and the pump body is rotatably mounted in an opening (11) in the vat (2); and (B) Apparatus for performing the above where each duct is a cylindrical element (12) with opposed liquid outlets causing the elements to rotate.
