Vacuum distillation of water, etc uses a vacuum produced by gravity flow of the liquid in a 10 m column. Evaporation is produced by cavitation within the column at the level of water jets (15) supplied by a variable pressure pump. The water may be pre-heated and the column filled using a pump. Several such columns are arranged in parallel or series.
