PROBLEM TO BE SOLVED: To provide a method for separating the head portion of a fish, capable of simply and accurately separating the head portion into components and especially capable of realizing the improvement in productivity and the lowering in cost, when nose cartilage is separated from the fish head portion. ;SOLUTION: This device for separating the head portion of a fish is provided with a heating section for heating the head portion 1 and with a rotatable rotary drum 11 into which the heated head portion 1 is charged. The rotary drum 11 has net-like portions communicating with the inner and outer surfaces of the drum 11 on the side surfaces, and plural plate blades 19 are attached to the inner surface of the drum 11.;COPYRIGHT: (C)1999,JPO
