PURPOSE: To rapidly and accurately measure the foam retention and foam retention stability of beer by specifically determining a foam protein component being one of main components prescribing the foam retention of beer by applying an immunological method. ;CONSTITUTION: The foam retention and foam retention stability of beer are measured by measuring the content of foam protein in a final product of beer and a beef samaple in a beer manufacturing process by an immunological measuring method setting foam protein to an antigen and using an antibody obtained from the antigen.;COPYRIGHT: (C)1995,JPO
