PROBLEM TO BE SOLVED: To provide a food product of Hericium erinaceum boiled plain and processed by maintaining active components of the Hericium erinaceum in a nearly raw state and a method for plain boiling treatment. SOLUTION: This food product of the Hericium erinaceum boiled plain is prepared by boiling a fruit body of the Hericium erinaceum in seawater diluted to 3-6 times for 1-3 min. The active oxygen scavenging ability and lipid peroxide formation inhibitory ability which are antioxidizing functions of the fruit body of the Hericium erinaceum are maintained in the nearly raw state. The seawater for boiling the Hericium erinaceum is preferably deep sea water and aqueous solutions of various kinds of salts having composition components close to those of the seawater may be used.
