The olive oil yield and by-product quantification apparatus comprises a tubular piston (1) moving inside a tube (2) housing the olive sample with the dry residue (3), the water (4) and the oil (5) separated from each other by centrifugation. Also claimed is a process using the apparatus. CLAIMED PROCESS - The process permits direct reading of the oil volume in millilitres on a graduated scale in small-diameter transparent tubular extension (8) of the piston.
