A method for preparing a dietetic, cholesterol-reducedwhole egg or egg yolk product is characterized by dehydratingthe whole egg or the yolk and then by mixing it with a low-cholesterol extractant based on liquid food oils, theextractant being allowed to act, and this reactant then beingremoved from the egg substance during a de-oiling stage.
