PURPOSE: Provided are a shallot juice and its ethylacetate extract having an anticancer effect on cancer cells. Therefore active ingredients of the extract can be used as food additives. Also, provided is its extraction method. CONSTITUTION: The shallot juice is manufactured by crushing a shallot and filtering it, and it has an anticancer activity. The shallot juice is extracted with an organic solvent, preferably ethylacetate. The active ingredients of the extract are used for a pharmaceutical composition and as food additives.
