A process of extraction of epigallocatechin gallate from green tea

PURPOSE: Provided is a process of the extraction of epigallocatechin gallate from green tea, thereby selectively producing the extract of epigallocatechin gallate having excellent antioxidation activity in higher yield. CONSTITUTION: The process of the extraction of epigallocatechin gallate comprises the steps of: adding pulverized green tea then heating it; fractioning the extract with chloroform to remove impurities; separating a water layer and fractioning it with ethylacetate; and separating an ethylacetate layer then subjecting it to reverse-phase chromatography.
