PURPOSE: A method for preparing mushroom mycelium using buckwheat malt containing a quantity of rutin as a kind of flavonoid is provided which has an enhanced growing rate of mycelium, thus reduces a production period thereof and increases the yield of functional polysaccharide. CONSTITUTION: Unpolished rice and buckwheat are germinated, steamed at 121deg.C and 1.2kg/cm¬3 for 10 to 20min, inserted into a spawn bottle and sterilized at 121deg.C and 1.2kg/cm¬3 for 30 to 120min. Thereafter, Phellinus linteus, Cordyceps spp. or Inonotus obliquus is inoculated into the medium and cultured at a temperature of 23 to 28deg.C, at a relative humidity of 55 to 80% for 15 to 90 days.
