PURPOSE: A process for preparing Lycium chinense MILL. wine is provided, thereby preparing very high quality Lycium chinense MILL. wine having the taste and flavor, color and aroma peculiar to Lycium chinense MILL. CONSTITUTION: A process for preparing Lycium chinense MILL. wine comprises the steps of: dipping rice in water for 3 to 12 hours; preparing hard boiled rice; adding pine needles and yeast into the hard boiled rice; boiling Lycium chinense MILL. fruits, Lycium chinense MILL. leaves and Lycium chinense MILL. roots in water and adding them with malt into the hard boiled rice mixture; mixing and adding water into the mixture and fermenting them for 15 days; filtering the first fermented mixture; and second fermenting the filtered solution.
