PURPOSE: A powder product for spicy fried chicken containing Guar gum, xanthan gum and oleoresin without garlic is provided to serve a crisp taste of fried and seasoned chicken. CONSTITUTION: The powder comprises 53-55wt% of wheat flour, 40-42wt% of corn starch, 2-3wt% of refined salt, 0.7-0.8wt% of monosodium L-glutamate, 0.3wt% of black ground pepper, 0.3wt% of white ground pepper, 0.5-0.6wt% of Guar gum, 0.1wt% of xanthan gum, 0.1wt% of soy bean oil, 0.02-0.03wt% of paprika oleoresin and 0.015-0.02wt% of Capsicum oleoresin.
