PURPOSE: A method and apparatus for thawing at low temperature vacuum are provided to thaw frozen food rapidly at low saturated temperature. CONSTITUTION: An apparatus includes a vacuum chamber(10) having an electric heater(11), a water tray(13) contacting with the electric heater and a support(15) installed on the water tray and having a plurality of penetrating holes formed thereon; a vacuum pump(20) fluidically connected with one side of the vacuum chamber; and a door(30) installed on a front side of the vacuum chamber. A method comprises the steps of: a step forming vacuum in the vacuum chamber using the vacuum pump; a step vaporizing water in the vacuum chamber by the electric heater; a step thawing frozen food in the vacuum chamber using condensed latent heat of saturated steam; and a step releasing vacuum by flowing air into the vacuum chamber.
