A method for extracting water-soluble calcium from fish bone

PURPOSE: Provided is a method for extracting water-soluble calcium from fish bones in a high yield by using enzymatic, chemical and physical methods. CONSTITUTION: The effective extraction method comprises the steps of: (i) treating fish bones with enzyme, tuna intestine crude enzyme(TICE), at 40deg.C and pH7 for 6hrs.; (ii) reacting the fish bones of step(i) with an organic acid, acetic acid, in a weight/volume ratio of 1 : 300 for 4hrs.; (iii) and applying a pressure of 2.0atm for 12hrs.
