The apparatus for evacuating paper or plastic bags (22) comprises two plates (20, 21) which slide together to grip the top (25) of the bag while leaving a gap (30), through which air can be sucked out. The plates have longitudinal suction channels (27, 28), so that they grip the walls of the bag and a movable plate (29) is mounted on the base of one of them. This allows the width of the gap (30) to be adjusted. An Independent claim is included for apparatus for applying suction to the walls of a bag near its opening, as described above.
