Process for cooling of mass of, e.g. meat-, tissue-, vegetable- and/or fruit-containing substance in container involves briefly supplying nitrogen to nozzle by pressure pulse which is increased in relation to working pressure
Cooling of mass of, e.g. meat-, tissue-, vegetable- and/or fruit-containing substance in a container (2), comprises supplying liquefied nitrogen in lower region of container at a constant working pressure via nozzle(s) (7). During the cooling process and/or stoppage times, the nitrogen is briefly supplied to the nozzle by pressure pulse which is increased in relation to the working pressure. An Independent claim is also included for a device for carrying out the method, comprising mechanism for generating pressure pulse and mechanism for supplying liquid and/or gaseous nitrogen to the nozzle during the cooling process and/or stoppage times.
