Method in which water content of air is measured: (Q2) in the exterior air of a processing machine or in a receptacle (20) containing products to be treated; (Q3) in the treated air flow output from the processing machine (1); and if (Q2) is measured on the exterior air, the water content (Q1) in the receptacle (20) at least in the air filled part (A) of the latter, containing products (P) to be treated.. Method of processing products (P) by treated air from a thermodynamic processing machine which consists of: (a) calculating the operating regime for the machine defined by a group of predetermined values of operating parameters: including (a) operating state of fan motors (7,11) driving the air to be treated by the machine, (b) opening state of registers (13-16, 19) for air access to be treated by the machine, (c) operating state of the machines compressor(s), (d) switching state of an inversion valve inverting the operation of the machine, (e) the quantity of product (P) to be treated, (f) the water quantity to be extracted in unit time, which is determined from the type of product nature and the processing duration required, taking into account quality, processing time, electricity consumption and economic cost; Load into a partially closed receptacle (20) a quantity of product to be treated; sample some of the air from the product load, and if needed mix it with exterior air; control the flow, temperature and/or the rate of vapor saturation of the processed air so as to produce a treated air flow that is applied to dehumidifying/humidifying treatment, heating, and/or air refreshment treatment and; re-inject some of the treated air flow into the product load. The treatment is continued until the predetermined parameters are reached.
