P An extractor hood (10) for cooking fumes comprises suction means (11, 12) for cooking fumes and control means (21) for the operation of the suction means (11, 12) .It includes temperature measuring means (14) (T1) arranged substantially on the cooking smoke path and calculation means (22) of a temperature difference (DELTAT) between the measured temperature (T1) and a reference temperature (TA).
