The control system for a pressure cooker comprises an air purge valve (7) connecting the interior (100) of the cooker with the atmosphere. The valve is also connected to a pipe system (3, 4, 5) which conveys fluid from the inside of the cooker to it. The valve is shut off by a capsule (71) containing a liquid which expands when heated, preventing soiling of the valve by cooking broth.
