The shellfish opener for a left or right hander allows the opening operation in a single phase. The opener comprises an arm (H) with a connecting axis between two positioning springs (I,N) of an oscillating collar allowing longitudinal displacement on the rotational axis. The arm has a sharp blade (M), a handle in its extension and a second sharp blade fixed parallel to the first on a tipping flat for the left to right reversibility.
