Use of di- and tri-galactoglycerides or other glycolipids having higher amylose complexing potencies compared to conventional food processing emulsifiers, from washing waters derived from cleaning, peeling and slicing steps A starch-based dehydrated flake is enriched with 0.05 wt.% or more of a vegetable-derived glycolipid. Independent claims are also included for: (1) the use of the glycolipid as an amylose-complexing agent; and (2) production of starch-based dehydrated flakes from a starch-based material such that the glycolipid is added as an emulsifier.
