FOOD FOR PERSONS WITH DIFFICULTY IN DIGESTION OR SWALLOWING, AND DIGESTION OR SWALLOWING AUXILIARY COMPOSITION

PPROBLEM TO BE SOLVED: To provide food for persons handicapped with swallowing as swallowing food suitable for persons handicapped with digestion or swallowing and persons with lowered digestion or swallowing function such as elderly people, and having in palate feeling (1) excellent bolus formability (easiness of food to settle into shape in the mouth) and (2) low adhesion properties to the throat, and in function tastelessness, odorlessness, transparency and excellent water retainability. PSOLUTION: The food is provided with characteristics most suitable for digestion or swallowing through formulating deacyl gellan gum and/or agar with psyllium seed gum.
