PROBLEM TO BE SOLVED: To provide an apparatus for cutting a fish body designed to simply set or regulate cutting positions delicately different according to the species or size of the fish body without relying on the skill of an operator and efficiently process a loin of uniform quality in a large amount and to provide a method for cutting the fish body.;SOLUTION: The apparatus 1 for cutting the fish body is equipped with a rotating table 3 rotating in a state of holding the fish body A stepwise by a prescribed angle, a measuring means 5 for setting processing dimensions and measuring the fish body A, a head and tail cutting apparatus 7 for cutting the head a and tail b of the fish body A, a belly cutting apparatus 9 for cutting the belly c of the fish body A and a controller 11 for determining the cutting positions in the head and tail cutting apparatus 7 and the belly cutting apparatus 9 based on the data of processing dimensions measured with the measuring means 5.
