PPROBLEM TO BE SOLVED: To provide a method for safely producing Clitoria ternatea L. flower extract in high concentration, excellent in brightness, chroma and tolerance as a natural edible food coloring matter on an industrial scale at a low cost without causing denaturation to existing ingredients and generating precipitate with the lapse of time when added to food products. PSOLUTION: This method for producing Clitoria ternatea L. flower extract comprises the following processes: a process of bringing Clitoria ternatea L. flower extract into contact with a macroporous aromatic adsorbent and/or an aromatic modified adsorbent to adsorb Clitoria ternatea L. flower extract ingredients, and a process of releasing the Clitoria ternatea L. flower extract from the adsorbent by bringing the adsorbent adsorbed with the Clitoria ternatea L. flower extract into contact with a non-acidic organic solvent or a mixed solvent consisting of the non-acidic organic solvent and water.
