PURPOSE:To provide a processed frozen food retaining the tastiness in season of a green farm product just harvested. CONSTITUTION:A green farm product is blanched through a combination of (A) color-developing treatment by hot water treatment and (B) swelling treatment by steaming. The blanching process is conducted using a relevant apparatus made up of (A) a cylinder having at least a color-developing zone and a swelling zone, (B) a means for feeding the cylinder with steam and (C) a means for moving the green farm product inside the cylinder. Said green farm product is beans such as green peas with pod, kidney beans, unmatured soybeans, broad beans or green peas, or green solid vegetables such as green asparagus.
