Production (M1) of vinegar by acetic fermentation of beer followed by clarification comprising removing carbon dioxide (CO2) from the beer before fermentation, is new. Independent claims are also included for: (1) beer vinegar with a CO2 content of 2 g/l or less; and (2) apparatus for carrying out (M1), comprising a beer storage vessel (2), a receiver vessel (4) connected to the storage vessel by a pipe (3), and a nitrogen injector (5) mounted on the pipe at a sufficient distance (D) from the receiver vessel to allow good dissolution of nitrogen in the beer.
