Deep freeze installation (1) using cryogenics is for purees of green vegetables in the form of granules different in shape and size and comprises a green vegetable mixer (3) which washes and classifies them, a conveyor belt (4) which feeds them to a grinder (5). The vegetables are then passed to a sieve where the puree or cream is produced and driven and conducted by means of a pump and cooler interchanger (6,7). The refrigerated puree is then conveyed to a deposit from which it is impelled by a pump (7a) to the upper part of a deep freezer machine (11) from which it is conveyed to internal injection pumps which impel the drops of puree into a nitrogen recipient in which they are deep frozen, being solidified into the form of granules (19) conveyed by conveyor belts to a packing area.
