The procedure is for preparing sucking pig involving pre-cooking and packing together with measures to be taken by consumer on acquisition. Cleaning and removal of internal organs are involved, followed by injection of brine comprising 10 per cent common salt, 2 per cent oregano, 1 per cent garlic, 0.5 per cent wine, 0.5 per cent preservative E.341 dissolved in a sufficient quantity of water to make up to 100 per cent. The resultant product is packed and placed in an oven at 80 degrees Celsius for two hours. It is then cooled to -18 degrees Celsius for 45 minutes. The piece of sucking pig when acquired by the consumer is placed in an oven at 250 degrees Celsius for 15 minutes, after which it is ready for consumption.
