Tetrahydro-beta-phenolate carbolins are used as anti-oxidants for termination of lipidic peroxidation. The preparation of the compounds derives from natural precursors (amino-acids or their derivatives, phenolic amins and aldehydes) and their possible application in pharmaceuticals, nutra-ceuticals, functional foods and for the prevention of oxidative esters.
