PURPOSE: Provided is a method for manufacturing chungkookjang having improved flavor by adding yucca extracts during or after fermentation of chungkookjang. CONSTITUTION: The method for manufacturing chungkookjang comprises the steps of: preparing meju by soaking soybeans in water and followed by steaming and fermenting them; adding dietary salts to the prepared meju then adding 0.01-10 mg/g of crushed yucca extracts thereto and mixing them together; maturing the mixture; and seasoning the matured mixture.
