Powder of lactic acid bacteria coated with levan and alginate bead having improved survival ability and method of preparing the same

PURPOSE: Provided are powder of lactic acid bacteria coated with levan then included by an alginate bead and a method for preparing the same, thereby improving viability and stability of lactic acid bacteria to extend its storage at low and normal temperatures and increasing acid tolerance and bile tolerance thereof. CONSTITUTION: In lactic acid bacteria powder are composed of lactic acid bacteria, levan and metal alginate salt, it is coated with levan, as a polymer, then included by a metal alginate bead. The lactic acid bacteria are selected from the group consisting of Streptococcus sp., Lactococcus sp., Enterococcus sp., lactobacillus sp., Pediococcus sp., Leuconostoc sp., Weissella sp., and Bifidobacterium sp. strains.
