PURPOSE: Kimchi additive liquid containing an extract of Cervi Parvum Cornu and Acanthopanacis Cortex is provided. Kimchi using the kimchi additive liquid has excellent characteristics of kimchi containing total sugar content, reducing sugar content, amino acid content, number of lactic acid bacteria as well as palatability. CONSTITUTION: Cervi Parvum Cornu and Acanthopanacis Cortex are extracted in water, mixed with 10 to 30%(w/v) of activated carbon and then centrifuged, based on the total weight of the extract to give kimchi additive liquid. About 1 to 5%(w/w) of the liquid is added to a conventional kimchi material containing one or more vegetables selected from the group consisting of cabbage, radish, young radish(yulmoo), Ixeris sonchifolia(Godulbaegi), green onion, mustard leaf and dried edible vegetables.
