PURPOSE: A natural food preservative containing a bamboo stem extract having antioxidant activity and antimicrobial activity is provided. The bamboo stem extract is stable to heat while exhibiting nitrite scavenging effects and preventing decay by inhibiting the proliferation of microorganisms such as gram positive bacteria, gram negative bacteria, yeast or the like. CONSTITUTION: The food preservative contains a crude extract, a non-polar solvent extract and a polar solvent extract of bamboo stems as an effective ingredient. The crude extract is extracted with water, lower alcohol such as ethanol and methanol or a mixture thereof. The non-polar solvent extract is extracted with hexane, dichloromethane, chloroform or ethylacetate. The polar solvent extract is extracted with acetone, butanol, ethanol, methanol or water. The bamboo is selected from the group consisting of Phyllostachys bambusoides, Phyllostachys nigra, Phyllostachys pubescens and Phyllostachys nigra Munro.
