A Process for Manufacturing Crystalline Maltitol and Crystalline Mixture Solid Containing the same

The present invention provides a crystalline maltitol and a method for producing a smoked crystal containing the same, which is economically advantageous.;The method of the present invention uses syrup having a maltose purity of 81 to 90% as a starting material. The syrup is hydrogenated in the presence of a catalyst and then separated by chromatography using a cation exchange resin to give a maltitol aqueous solution having a purity of maltitol of 94 to 99.9%. The aqueous solution is further crystallized, separated, cooled and kneaded in the presence of the termination adjuvant to simultaneously produce crystalline maltitol and a cloudy crystal containing it.
