PURPOSE: Provided are liquor based on chestnut flowers and a preparing method thereof. Therefore the prepared liquor possesses an astringent taste and the taste and flavor peculiar to chestnut flowers. CONSTITUTION: The preparation method of liquor based on chestnut flowers comprises the steps of: cutting fresh chestnut flowers into 2-5mm then crushing them to prepare fresh chestnut flower material; drying fresh chestnut flowers to a moisture content of 5-10 wt.% then cutting them into 2-10cm to prepare dried chestnut flower material; mixing a part of the fresh chestnut flower material with rice then steaming the mixture followed by inoculating Rhizopus oligosporus thereto to prepare koji; adding a part of the fresh chestnut flower followed by leaving and steaming them to prepare an extract; mixing a part of the dried chestnut flower material with rice followed by leaving and steaming the mixture to prepare mashing material; adding water and yeast to the koji to prepare crude liquor; mixing the koji, steamed rice, malted rice with the crude liquor then followed by the extract and water; subjecting the mixture to meshing process to give a meshing solution; and mixing the meshing material, yeast and water with the meshing solution then subjecting the mixture to meshing process.
