A granular to powdery, starch-based substance is obtained by mixing a starch-containing component with water in an extruder at 120-250 (preferably 160-220) degreesC with a total water content of less than 40 (preferably 15-20) wt% in the mixture and then drying, milling and sieving the extruded product. A method for the production of a granular to powdery starch-containing mixture by mixing a starch-containing component (A) in an extruder with a water-containing component (B), in which (a) the total water content of the mixture of (A) and (B) is less than 40 (preferably 15-20) wt%, (b) the temperature during mixing and heating is 120-250 (preferably 160-220) degreesC, (c) the extruded product is dried and (d) the dried extrudate is milled and sieved. An Independent claim is also included for a mixture made by this method.
