A drying process for preparation of swelling and solution modified cereal flour and starch by alkaline crosslinking where the OH-group containing raw material is subjected in the dry state to an alkaline reaction by means of reagents selected from halogen-free polyoxides at a temperature from above room temperature to 70degreesC with thermal drying is new.
