A method of preparing gelatine based microcapsules containing a hydrophobic liquid by complex coacervation consisting of forming a dispersion of gelatine coated droplets of the liquid in an aqueous medium containing a dispersant and a protective carboxymethylcellulose type colloid, cooling and crosslinking the gelatine with one or more crosslinking agents, in which the dispersant is an acrylic acid-maleic anhydride copolymer and one crosslinker is a (meth)acrylate copolymer. It is disclosed that the gelatine is first crosslinked by, eg, formalin or glutaraldehyde before being further hardened by use of the (meth)acrylate copolymer. An Independent claim is included for microcapsules with a 35-50 wt.% dry extract and a diameter 0.5-100 mum and preferably 10-25 mum.
