The oven has an air turbine (12) including a vane (22) turning around a rotation axis (21) on a circular trajectory, to stir a cooking atmosphere heated by a gas burner (11) inside a chamber (2). A diffuser disc (50) inside the chamber turns around the axis. A water supply (34) directs water from the chambers outside to a vicinity of the disc, such that the water falls on the disc and is vaporized by the heat from the burner.
