PROBLEM TO BE SOLVED: To provide a heat-resistant glutamic acid decarboxylase, to provide a DNA encoding the same, and to provide a method for producing especially γ-aminobutyric acid using the heat-resistant glutamic acid decarboxylase.;SOLUTION: The heat-resistant glutamic acid decarboxylase has the following properties: (i) retaining ≥80% glutamic acid decarboxylase activity after treated at 85°C for 3 h and (ii) exhibiting activity at 50°C or higher, being about 95°C or higher in optimum temperature. The DNA encoding the enzyme comprises a specific base sequence. The method for producing γ-aminobutyric acid comprises making the enzyme act on especially glutamic acid to effect decarboxylation.;COPYRIGHT: (C)2005,JPO&NCIPI
